I had to go to a picnic & was asked to bring a side dish. I used to work in a nursing home & they made a dish they called "White Barbecue Chicken Salad" that I have been craving for awhile now. I searched online for a recipe but couldn't find one. I did find a recipe for white barbecue sauce here and I remembered what they put in the salad. It turned out amazing!
Pasta Salad:
- 1 Box Rotini Noodles
- 1 Red Bell Pepper (Diced)
- 1 Orange Bell Pepper Diced)
- 1/2 Red Onion (Diced)
- Diced Chicken (I used the premade chicken strips & cut them into smaller pieces)
- 1 Can Of Black Beans
- 2 Cans Of Corn
White Barbecue Sauce:
- 2 Cups Mayo
- 2 Tb Black Pepper
- 2 Tb Salt
- 6 Tb Lemon Juice
- 6 Tb Distilled White Vinegar
- 4 Tb Sugar
Directions:
Prepare the pasta as directed. While the pasta is cooking dice up the veggies & chicken, drain the black beans & corn. To prepare the sauce just mix all the ingredients & stir until smooth. Once everything is prepared mix together, chill for an hour then enjoy!
